I got this recipe from Pillsbury.com and the kids loved it. It is called Breakfast Quiches To Go. This one in particular is a mini spinach and cheese quiche. To make this you will need:
2 cans( 8oz each) Pillsbury refrigerated garlic butter cresent dinner rolls(8 rolls each)
1 package(8oz) cream cheese, softened
3 eggs
1 small onion chopped (1/4 cup)
1 box(9oz) frozen chopped spinach(perferably Green Giant) thawed, squeezed to drain
1/4 tsp of salt
1/8 tsp of pepper
1 cup shredded mozzarella cheese(4oz)
Directions:
Heat oven to 350 degrees. Spray a muffin pan with cooking spray.
Separate each can of cresent dough into eight triangles.
press one triangle on the bottom of muffin cup and one up the sides of the muffin pan.
In a large bowl, mix the softened cream cheese, eggs, chopped oinion, spinach, salt, pepper, and mozzarella till well blended.
Fill each cup to the top with mixture but do not over fill.
Bake for 15 to 20 minutes or until inserted knife comes clean from the center.
remove from pan and serve(let stand for 10 minutes)
This was delicious, thanks Pillsbury. Try this and let me know what you think.
